Filipino Chicken Adobo: A Basic Recipe

Adobo is a fantastic and very popular Filipino dish! It's known for its savory, tangy, and sometimes slightly sweet flavor. Here’s a basic way to make Chicken Adobo:

What is Adobo?

Adobo is a cooking process in the Philippines that involves braising meat (most commonly chicken or pork) in a marinade of vinegar, soy sauce, garlic, black peppercorns, and bay leaves. The vinegar and soy sauce also act as preservatives.

Typical Ingredients:

  • Protein: About 2 lbs (1 kg) of chicken pieces.
  • Marinade/Sauce:
    • Soy sauce ½ cup
    • White vinegar ½ cup
    • 1 whole head of garlic, crushed
    • 1 teaspoon whole black peppercorns
    • 2-3 dried bay leaves

Basic Steps to Make Chicken Adobo:

  1. Marinate (Optional but Recommended): In a bowl, combine the chicken, soy sauce, crushed garlic, peppercorns, and bay leaves. Marinate for at least 30 minutes.
  2. Sear the Chicken (Optional but Adds Flavor): Heat oil in a pot and sear the chicken pieces until browned.
  3. Braise the Adobo: Return the chicken to the pot. Pour in the marinade and add the vinegar. Let it simmer for about 5-10 minutes without covering. Then cover and simmer for 25-40 minutes until tender.
  4. Rest and Serve: Taste the sauce and adjust seasoning if necessary. Adobo often tastes even better the next day!
